Everyone has their own recipe of the kiwi classic White bait fritter, but if it has flour in it, stop right now and read this one, My mouth is watering just thinking about eating these .
Ingredients
- 1 x 250g packet of Whitebait, thawed if frozen (Frozen white bait is seriously fine )
- 1 lemon zest
- 1 egg separated
- salt and pepper
- desert spoon of finely chopped chives
- butter and oil for frying
- lemon to squeeze and serve
Method
- Seperate the egg white from the yolk keeping both
- Mix the yolk and salt and pepper and zest in a clean mixing bowl so its well combined
- Add the whitebait and chives and fold to incorporate
- Melt the oil and Butter in a good frying pan over medium low heat ( don’t let the butter brown )
- Wisk the egg white until soft peaks and gently fold into the white bait mixture
- Drop 1 tablespoon of the whitebait into the frying pan ( depending on the size of the pan approx 4 per batch )
- Cook over medium heat 1 minute on each side approx
- Remove from the heat and serve immediately with a squeeze of lemon and cracked pepper
- If feeling naughty buy some fresh white bread and make a bigger fritter and place in between 2 slices spread with mayo
- You can cook these before hand and reheat which is perfectly acceptable, just don’t seperate the egg whisk the whole egg and carry on as normal

Ingredients
- 1 Tbsp milk or more if needed
- 1 packet of Essentials Vanilla or Chocolate Cake Mix
- 100g butter, softened
- 2 ½ cups icing sugar, sifted
- Food colouring of your choice
- Mixed lollies, to decorate
Method
- Preheat oven to 180ºC
- Make cupcakes as per instructions on packet. Allow time to cool before icing.
- Smooth icing onto cupcakes and decorate with lollies.
To make icing:
- Place butter, icing sugar and milk in a bowl and beat until combined.
- Beat for 2 to 3 minutes on high speed until mixture is pale and creamy.
- Separate into a few batches depending on how many different colours of icing you would like.
- Beat in food colouring, adding a small amount at a time until you get desired colour.
