Pork Fillets with Mustard Cream Sauce

This recipe is a true 80’s throw back, My mother used to make this dish for her dinner parties all the time and when my sister and I went out knowing Mum and Dad were having a dinner party and we caught up  at bar somewhere in town we used to say to each other  race you home for the left overs!! it is truly sublime

Ingredients


  • 4 pork fillets
  • 1 1/2 tsp curry powder
  • 30g butter
  • 1 tbsp lemon juice
  • 1 cup water
  • 1 cup chicken stock
  • 2 tsp lemon juice
  • 2 tsp french mustard
  • 2 tbsp cream
  • 2 tsp cornflour
  • 2 tsp water
  • salt and pepper

Method


  1. Sprinkle curry powder on greaseproof paper and roll fillets in it. Melt butter in baking dish, add fillets and pour over lemon juice. Bake uncovered for 15 minutes, basting often.
  2. To make the sauce; mix the water, chicken stock, juice, cream and mustard in a pot and combine cornflour and water. Stir into the sauce so it thickens. Reduce heat, simmer uncovered for 3 minutes. Season to taste.
