Peking Duck Pancakes with Hoisin Sauce

Ingredients


  • 1/2 or whole cooked golden duck
  • 1/4 hoisin Sauce
  • 4 spring onions
  • 1/2 cucumber
  • 1 packet fine chinese pancake (sold at Golden duck)
  • 1 ripe mango

Method


  1. Shred up the duck into small pieces.
  2. Finely slice the spring onion on an angle, using mainly the white part.
  3. Cut the cucumber horizontally, scoop out the seeds and finely slice long ways into thin ribbons (alternatively you can use a peeler and peel cucumber ribbons).
  4. Peel and finely slice the mango into strips.
  5. Unpack the pancakes and heat for 20 seconds in microwave.
  6. Place the pancakes in a Chinese bamboo steamer, with the duck, cucumber, hoisin sauce and spring onions on a platter.
  7. To construct, place a small spread of hoisin sauce onto the pancake, followed by some duck, a ribbon or 2 of cucumber, a slice or 2 of mango, a sprinkle of spring onion, roll up and enjoy! (You can make up a few to start with before serving.)
