A very favourite dish of my Fathers, Mum and Dad used to go searching for the best Mussles around, Dad also loved Rich Stein so its with pleasure I share his recipe of Mussles in Wine
Ingredients
- 1 3/4 kilo of Mussles, scrubbed and rinsed and de beareded
- 3 /12 tbsp Butter 50g
- 1 medium sized onion finely chopped
- 50 0r so mls of Dry white Wine
- 1 tbsp coarsely chopped parsley
Method
- Put the muscles, butter and onion, and white wine and mussles in to a very large pan
- Cover and cook on high heat for 3 to4 minutes, shaking the pan even now and then until the mussels have opened
- Discard any that do not open
- Spoon the muscles into bowls
- Add the parsley to the remains juices
- then pour all but the last 1 or 2 tbsp ( which might contain some grit ) back over the muscles
