Times have changed a bit but when I was growing up we had pudding every single night, this was one of my favourites Recipe by my Mum Lynne Perkins
Ingredients
- 1 tsp lemon rind
- 2 tbsp lemon juice
- 1/2 cup sugar
- 2 tbsp flour
- 3/4 cup milk
- 1 tbsp melted butter
- 1 egg separated
Method
- Preheat oven to 180ºC, fan bake. Grease a medium sized pudding bowl. Boil a jug of water.
- Combine in order the ingredients except the egg, separate the egg yolk and add to the mixture.
- Beat the egg white until stiff peaks. Fold egg white gently into the mixture.
- Turn mixture out into the pudding bowl. Place in a baking dish and pour around the boiling water so it comes up the sides of the pudding bowl to around halfway.
- Bake for 35-40 minutes until the top has turned golden.
