Ingredients
Base:
- 1 1/2 packets wine biscuits
- 170g butter
- 175g sugar
- 5 tbsp cocoa
- 1 egg
Filling:
- 2 cups icing sugar
- 45g butter
- 6-8 drops peppermint essence
- 3-4 tbsp boiling water
Topping:
- 350g dark chocolate
- 55g butter
Method
- Butter a 20cm x 30cm slice tin and line with baking paper.
- Blitz the wine biscuits in a food processor until resembling coarse breadcrumbs. Transfer to a large mixing bowl.
- In a saucepan, melt the butter, sugar, and cocoa over low heat, stirring until combined. Allow to cool slightly then add the beaten egg.
- Pour the butter mixture into the crumbs and mix well.
- Press evenly into the prepared tin and refrigerate until firm.
Filling:
- In a small mixing bowl, mix together the icing sugar, butter and peppermint essence, adding enough boiling water until smooth.
- Spread over the slice base and refrigerate until firm.
Topping:
- Melt the chocolate and the butter in a bowl over hot water, stirring until smooth.
- Spread the chocolate over the mint slice. Refrigerate until the chocolate sets, then slice.
