Lamb, Bacon and Spinach Sticks

If you have a young family and find it difficult getting them to eat veggies I found over the years that by adding secret veg into meatballs or lasagne type dishes worked really well, In this recipe it says to roast the tomatoes etc, but to be honest if you just gently panfried some tomato paste , sugar ( I use Stevia for this kind go thing ) and a can of chopped tomatoes and then add the rosemary It works just as well , I also didn’t even pan fry off the onion and bacon, just tossed it all in together .The mixture can be quite lose and sticky so you could add some rice flour (1 tbsp max ) or try leaving out the egg.

Ingredients


  • 1 small red onion, diced
  • 2 rashers bacon, diced
  • 2 tsp olive oil
  • 500g lamb mince
  • 1/2 cup shredded spinach
  • 2 tsp salt
  • 1 clove garlic
  • 1 egg

Sauce

  • 6 tomatoes, halved
  • 2 tsp fresh rosemary, chopped
  • 1 tsp salt
  • 1 tsp caster sugar
  • 2 tsp tomato paste
  • 2 tbsp water

Method


  1. Preheat oven to 200.ºC
  2. Fry onion and bacon in the olive oil. Mix all ingredients together and form oblong shapes.
  3. Pan fry in batches in oil and when brown, finish in the oven for 5 minutes.
  4. For the sauce, roast the tomatoes with the rosemary, salt and sugar for half an hour at 200 degrees.
  5. Puree the mixture until smooth. Simmer the tomato puree with the tomato paste and water for 5 minutes. Stir well and serve.
