Ingredients
- 1 whole garlic
- 1 1/2 cups baby spinach
- 1/2 cup basil
- 1/2 cup mint leaves
- 1/2 cup parsley
- juice of 1 lemon
- 2 tbsp apple cider
- 1 tbsp brown sugar/coconut sugar or stevia
- 1 cup olive oil
- 1 tsp salt
Method
- Preheat the oven to 180 degrees.
- Slice through the very top of the garlic bulb, exposing the cloves.
- Drizzle over some olive oil and wrap in tin foil and bake for 30 minutes.
- Remove from the oven and let cool.
- When cool, squeeze the garlic from the bulb into a small bulb.
- In a food processor place all the dressing ingredients including the garlic and process until smooth.
- Store in a clean sterilized jar for up to a week.
