Green Goddess Dressing

Ingredients


  • 1 whole garlic
  • 1 1/2 cups baby spinach
  • 1/2 cup basil
  • 1/2 cup mint leaves
  • 1/2 cup parsley
  • juice of 1 lemon
  • 2 tbsp apple cider
  • 1 tbsp brown sugar/coconut sugar or stevia
  • 1 cup olive oil
  • 1 tsp salt

Method


  1. Preheat the oven to 180 degrees.
  2. Slice through the very top of the garlic bulb, exposing the cloves.
  3. Drizzle over some olive oil and wrap in tin foil and bake for 30 minutes.
  4. Remove from the oven and let cool.
  5. When cool, squeeze the garlic from the bulb into a small bulb.
  6. In a food processor place all the dressing ingredients including the garlic and process until smooth.
  7. Store in a clean sterilized jar for up to a week.
