Ingredients
- 500 grams fish fillets
- 2 slim stalks of celery
- 2 spring onions
- 2 long green chillies
- 1/2 cup diced cucumber
Dressing
- 1/4 cup coriander and parsley
- zest of 2 limes
- 2 garlic cloves
- 1/4 tsp chilli flakes
- 1/2 olive oil
- 1 & 1/2 tsp salt
To serve
- 2 medium green tomatoes
- 1 avocado
- 4 bagels
- 2 limes
- 200 grams sour cream
Method
- Make the dressing by placing all ingredients in a blender and process until smooth and bright green. It should be quite tart from the lime.
- Tip into a large bowl, add the fish and all the remaining ingredients, turning gently to coat everything.
- To serve, place the tomatoes and fish in a serving bowl and arrange the remaining ingredients alongside.
- Spread the bagels with sour cream then top with tomato, avocado and the fish.
