Green Ceviche

Can be served immediately, or covered until cured to your liking! Recipe by Dish Magazine

Ingredients


  • 500 grams fish fillets
  • 2 slim stalks of celery
  • 2 spring onions
  • 2 long green chillies
  • 1/2 cup diced cucumber

Dressing

  • 1/4 cup coriander and parsley
  • zest of 2 limes
  • 2 garlic cloves
  • 1/4 tsp chilli flakes
  • 1/2 olive oil
  • 1 & 1/2 tsp salt

To serve

  • 2 medium green tomatoes
  • 1 avocado
  • 4 bagels
  • 2 limes
  • 200 grams sour cream

Method


  1. Make the dressing by placing all ingredients in a blender and process until smooth and bright green. It should be quite tart from the lime.
  2. Tip into a large bowl, add the fish and all the remaining ingredients, turning gently to coat everything.
  3. To serve, place the tomatoes and fish in a serving bowl and arrange the remaining ingredients alongside.
  4. Spread the bagels with sour cream then top with tomato, avocado and the fish.
