Granny Di’s Poussin

My lovely Mother in Law was an amazing cook and When she made these for a dinner party back in the 90’s I can remember thinking,oh my word these are so fancy and so delicious !! These little stuffed poisons then became my go to dish that I cooked for dinner parties pretending to be as fancy as gorgeous Di , It is the rice stuffing which is delicious. You could also just use a whole big chook too.

Ingredients


  • 8 small pousins
  • 80g wild rice
  • 3 sticks celery, chopped
  • 2 onions, diced
  • 200g mushrooms, chopped
  • butter
  • 150g pine nuts
  • 2 tbsp chicken stock
  • 1 egg
  • ginger and mango chutney

Method


  1. Preheat oven to 220ºC.
  2. Make the stuffing by cooking the wild rice with salted water (enough to cover) for 40 minutes. Saute the sticks of chopped celery, 2 onions, mushrooms in butter until soft, then add to the wild rice. Add the pine nuts, chicken stock and egg.
  3. Stuff the chicken with the stuffing. Cover the chicken with the ginger mango chutney and spray with olive oil. Cook for approx 1hr.
