You can seriously use what ever herbs you have in the fridge and perhaps in your garden ( within reason !!) Recipe by Ottolenghi Simple
Ingredients
- 1/2 very ripe avocado
- 3cm piece of ginger
- 1 small garlic clove
- 2 lemons; 1 tsp zest then 3 tbsp juices
- 1 green chilli, roughly chopped
- 1 tbsp tahini
- 85 ml olive oil
- 10g basil leave
- 10g tarragon leaves
- 10g dill
- 10g parsley leaves
- 10g coriander leaves
- 4 gem lettuces, trimmed and cut lengthways into eights
- 2 tsp black sesame seeds
- salt
Method
- Put the avocado, ginger, garlic, lemon zest and juice, chilli and tahini, into the small bowl of a food processor with 75ml of the oil and 1/3 tsp of salt.
- Blitz to a smooth paste, then add the herbs. Blitz again, then, with the machine still running, slowly pour in 60ml of water until smooth and combined.
- Mix the gem lettuce with the remaining teaspoons of oil and 1/8 tsp of salt until combined. Transfer to a platter, spoon over the dressing and sprinkle with the sesame seeds.
