Ingredients
- 8 fresh corn cobs
- parmesan for grating
- small handful parsley
- 1 long red chilli, finely chopped
Black Garlic Mayo
- 2-3 cloves black garlic
- 1/2 cup mayonnaise
Method
- Take the garlic out of its skin and mash with a fork until smooth. Stir in the mayonnaise.
- Cook the corn in boiling salted water until tender. Drain well.
- Brush with Black Garlic Mayo then top with a generous grating of parmesan and scatter over the parsley and chilli.
