You can replace the dill with any abundant herb in your garden. Could use rocket, more parsley or even coriander or basil! Recipe by Melanie Eady.
Ingredients
- 1/2 cup dill
- 1 cup italian parsley
- 1/2 cup mint leaves
- 2 tbsp salted capers
- 4 anchovy fillets
- 1 garlic clove
- cracked pepper
- 2 tbsp lemon juice
- 1/4 cup olive oil
Method
- Place all the herbs, garlic, anchovies, capers, salt and pepper into a small food processor and blitz in short bursts until roughly chopped.
- Add the lemon and oil and process again in short bursts until just combined.
