Ingredients
- 3/4 cup desiccated coconut
- 1 cup raisins (optional)
- 1 cup flour
- 1 tsp baking powder
- 1 egg
- 1 cup sugar
- 1 Tbsp cocoa
- 1 Tbsp golden syrup
- 110g butter
- 3 crushed weetbix
- 1 to 2 Tbsp milk
Method
- Preheat oven to 180ºC, fan forced. Line and grease a baking dish approx 27cm long.
- Mix together all dry ingredients.
- Melt butter and golden syrup, add a beaten egg. Add to the dry ingredients mixture. Mix well. If mixture looks too dry, add the milk.
- Press into a baking dish and cook for 30 minutes. When cool, ice with chocolate icing (Refer to Unbaked Cake for icing recipe). Cut into squares.
