Gone are the days of porridge laden with brown sugar ( however darn good that is !) these are my two versions which create a new dynamic to the humble porridge
Ingredients
Coconut Milk Porridge with Coconut granita
- 1/4 cup rolled outs
- 1/2 cup water
- pinch of salt
- 1 cup coconut milk ( you can use the coconuts milks which are more like a dairy milk substitute ie the So Good ones or Sanitarium)
- 1 tbsp coconut flakes / chips
- 1 tsp pumpkin and sunflower seeds
- 1 tbsp almond flakes
- Chopped fresh fruit I use Feijoas, kiwi fruit. mango
- blueberries
- 1 tbsp Coconut sugar ( optional )
- Big dollop of coconut yoghurt
- 1 zest of lime .
Porridge with cinnamon and raspberries
- 1/4 cup rolled outs
- 1/2 cup water
- pinch of salt
- 1 tsp of vanilla essence
- 1 cup milk or oat milk if Dairy free
- 1/2 tsp cinnamon
- 1/4 cup raspberries fresh or frozen
- 4 prunes sliced ( optional )
- a dollop of Vanilla yogurt
- 1 apple grated
- 1 tsp stevia
- 1 tsp maple syrup
Method
- Place the oats in a pot on the stove with the salt and water and cook over low heat until the water has been absorbed
- Add the coconut milk and cook gently so the oats are creamy and tender
- Dry fry the coconut, almonds, pumpkin and sunflower seeds in a small frying pan until lightly toasted.
- Pour the porridge into a bowl , sprinkle half the coconut sugar over the porridge
- Place the fruit to one side of the bowl
- Add the toasted coconut granita
- Place the dollop of coconut yogurt on top of the porridge
- Sprinkle over the remaining coconut sugar .
- Zest the lime of the top of all of it.
Porridge with cinnamon and raspberries
- Place the oats in a pot on the stove with the salt and water and cook over low heat until the water has been absorbed
- Add the milk and cinnamon and cook gently so the oats are creamy and tender
- Add the prunes and the raspberries and stevia and vanilla fold into the porridge gently
- Once the fruit is warmed pour into a bowl scatter over some extra raspberries and dollop the yogurt
- Grate the apple and place onto if the yoghurt and pour over the maple syrup
