This Apricot slice is just gorgeous, the apricot and coconut go so well together, When I made a batch for the pic I just getting my phone and by the time I came back a little mouse had come in and stolen a slice !! Thats how good it is .. Recipe was given to me by my Mum Lynne Perkins
Ingredients
The Base
- 90g Butter
- 1 cup plain flour
- 1/3 cup caster sugar
The Filling
- 1 2/3 cup Finely chopped up Apricots
- 1 cup water
- 1/4 cup caster sugar
The Crumble topping
- 90g Butter melted
- 1/3 cup coconut
- 1/4 cup shredded coconut
- 1/2 cup plain flour
- 1/2 cup brown sugar
Method
The Base
- Turn the oven to 180 degrees, Line a rectangle baking dish approx 19cm by 29 cms with baking paper
- Melt the butter
- Stir the flour into the sugar butter mixture
- Press into the prepared tin and bake for approx 10 min
The Filling
- Combine all ingredients in a pot and bring to boil for approx 10 minutes
- Place on top of the hot cooked base
The Crumble
- Melt the butter
- Combine all the ingredients together and sprinkle evenly over the top of the filling
- Bake in the oven for 20 minutes
