Steak Slice with Lemon and Thyme

According to my daughter this was the best meal she has had upon return to Auckland from Otago University !! You all must try this as,  you marinade the beef  after  after you have cooked it ,It creates an extraordinarily tender dish, I was given this recipe from a work Colleague whom gave me ‘Nigella Express’ to take home for  the weekend, It was one of many delicious things  I made. Recipe by Nigella Lawson 

Ingredients


  • 1 x 2.5cm rump Steak approx 600gm ( or use thick eye or sirloin )
  • 5 stalks fresh thyme, ( 1 tbsp )
  • 2 crushed garlic cloves
  • 80 ml Extra virgin Olive oil
  • zest and juice of 1 lemon
  • 1 tsp salt and pepper
  1. Trim any fat away from the the fillets / streaks and heat he bbq or griddle pan
  2. Brush both sides with Olive Oil  to prevent it sticking and cook for 3 minutes on each side plus cook each side for a further minute
  3. Whilst the steak is cooking, place the thyme lemon juiced and zest, garlic and salt and pepper in a wide and shallow dish
  4. Once the steak is cooked, place in the dish of the marinade for 4 minutes a side before removing it  to a board and slice thinly on the diagonal  serves 4
