Always good to have a good banana bread recipe and if you have bananas that are ready to be binned don’t waste them just make a couple of loves of this and you can pop them in the freezer, This one I served with maple cinnamon butter , truly scrum. This recipe is from Chelsea Winter
Ingredients
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 125gm softened butter
- 2 mashed bananas
- 1 cup milk
- 2 eggs
- 2 cups plain flour, sifted ( or 1 cup plain flour and 1 cup wholewheat flour )
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
Method
- Preheat the oven to 180 degrees
- Grease and line a loaf tin approx 25cm
- Place the sugar and butter in a bowl and beat until well combined pale and creamy
- Add eggs one at time beating well after each addition
- Sift in the flour and baking powder
- Dissolve the baking soda in the milk and add to the creamed butter mixture with bananas, mix together
- Pour into the loaf tin and bake for 1 hour or until the skewer comes out clean
To serve
Either slice and toast and spread with butter or with cinnamon maple butter or slice untoasted
To make the butter
1/3 cup Butter
1 desert spoon maple syrup
1/2 tsp cinnamon
Mix all ingredients until smooth, refrigerate or freeze
