Chicken Pie

Everyone needs a good Chicken pie recipe and this one was from my daughters school fundraising cookbook and it has been made in our household time and time again very morish Recipe by the McRobie Family from Dio Essence, Funny story when taking the photo graph I tripped and so the  first serving of chicken pie ended up on the floor then in the dog !

Ingredients


  • 1 large cooked free-range chicken
  • 2 leeks, sliced
  • 250g button mushrooms, sliced
  • butter, for cooking
  • 2 3/4 cups chicken stock
  • 50g butter
  • 3 tbsp plain flour
  • 1 tbsp mayonnaise
  • 1 sprig tarragon, chopped
  • wholegrain mustard, to taste
  • 2 sheets flaky puff pastry
  • salt and pepper

Method


  1. Preheat oven to 180ºC. Shred the chicken from the bones and place the meat in a bowl.
  2. Saute the leek and mushroom in a pan with some butter. Add to the chicken in the bowl.
  3. Melt the next measure of butter in the pan and add the flour to make a roux using some chicken stock. Add the mayonnaise, tarragon and mustard. Add the remaining chicken stock and thicken to a gravy consistency,
  4. Tip the gravy into the chicken bowl and toss through the mixture. Season with salt and pepper.
  5. Line a baking dish with a sheet of pastry, cover with the mixture, and top with another sheet of pastry. Cook until the pastry is brown and puffy. Serve with chutney and a salad.
