Holy Cow Beef

This could well be my all time best entertaining for a crowd recipe, You can do this at least the day before and just let it sit in the soy marinade , for a crowd I have served it with a salad of bean sprouts, mint ( normal or Vietnamese ) spring onions, shredded ice berg lettuce ,  fresh deseeded red chilli and chopped fresh coriander either in a bao bun or soft roll but can also be served with salads and rice it is truly Devine  Recipe from Essence of Dio Cookbook

Ingredients


  • 1 large piece eye fillet steak
  • oil, for rubbing beef
  • 1/2 cup raw sugar can easily use coconut sugar too
  • 3/4 cup olive oil
  • 1 tbsp chilli flakes
  • 2-3 cloves garlic, peeled and crushed
  • 3/4 cup soy sauce

Method


  1. Preheat the barbecue to very hot. Rub the beef with the olive oil and roll in the raw sugar. Cook the beef on the barbecue for approximately 15-20 minutes, turning as required. The sugar will caramelise and turn black.
  2. Wrap the fillet in 5 layers of tinfoil, securing the ends. Leave for 2 hours, do not refrigerate.
  3. To make the marinade, heat the olive oil in a small saucepan. Add the chilli flakes and garlic and saute for 5 minutes to allow the flavours to infuse. Remove from the heat and add the soy sauce.
  4. Slice the beef into thick slices, place in a deep dish, and pour over the marinade. Leave for 2 hours covered with tinfoil. Before serving, arrange beef on a platter. Stir the marinade and pour a little over the beef.
