Hakataramea Shanks with Marinade

Guy and I used to buy lamb shanks back in the early 90’s for around $2 each and although they have crept up in price they are still worth it, This Hakakaramea shank recipe was one of the first recipe I made with lamb shanks and it is so yummy and incredibly easy  give it a  go , I don’t use a lot of garlic powder so you can use  fresh crushed garlic . Pictured here with coriander salsa and the marinade on the side .

Ingredients

  • 2 lamb shanks
  • 2 tbsp dark soy sauce
  • 2 tbsp tomato sauce
  • 1 tbsp brown sugar or honey
  • pepper
  • 1 tsp garlic powder
  • 1/3 tsp grated ginger

Method

  1. Mix all marinade ingredients together until combined.
  2. Trim shanks. Enclose each shank with some marinade in a loose foil parcel. Place in a roasting dish in oven at 150-180 for 1.5-2 hours.
