Don’t underestimate these super easy and they are just delicious, when I cooked them for the photo I ended up eating 2 for lunch !Recipe by La Cigale French Market
Ingredients
- 3-4 leeks, cut into 10 cm lengths
- parisian vinaigrette or three vinegar vinaigrette
- finely chopped parsley
- salt and pepper
Parisian Vinaigrette
- 100ml extra virgin olive oil
- 30ml good quality white wine vinegar
- 1 generous tbsp Dijon mustard
- salt and peper to taste
Method
- Cook the leeks in salted water until soft. Drain and pat dry with paper towels.
- Combine all the dressing ingredients and whisk well
- Cut each leek in half (if large) and dress with vinaigrette and plenty of parsley. Season to taste and serve at once.
