Leeks Vinaigrette

Don’t underestimate these super easy and they are just delicious, when I cooked them for the photo I ended up eating 2 for lunch !Recipe by La Cigale French Market

Ingredients


  • 3-4 leeks, cut into 10 cm lengths
  • parisian vinaigrette or three vinegar vinaigrette
  • finely chopped parsley
  • salt and pepper

Parisian Vinaigrette

  • 100ml  extra virgin olive oil
  • 30ml good quality white wine vinegar
  • 1 generous tbsp Dijon mustard
  • salt and peper to taste

Method


  1. Cook the leeks in salted water until soft. Drain and pat dry with paper towels.
  2. Combine all the dressing ingredients and whisk well
  3. Cut each leek in half (if large) and dress with vinaigrette and plenty of parsley. Season to taste and serve at once.
